A quick visual overview of the key ingredients and cooking flow.

Drain 300 g soft tofu, cut gently into about 2 cm chunks and arrange in one layer in a heatproof deep plate. Fully thaw, devein and pat dry 200 g raw peeled, tailless shrimp. Mince 5 garlic cloves and thinly slice 2 spring onions; reserve the onions for finishing.

Using a 15 ml tablespoon, mix 1 tbsp light soy sauce, 2 tbsp water and all the garlic. Start heating enough water in a steamer to remain below the rack. Steamer water is separate from the 2 tbsp recipe water.

Spread all the shrimp over the tofu in one layer without piling them up. Pour over all the garlic sauce from Step 2, distributing the garlic across the shrimp and tofu. Leave the spring onions out for now.

When the water boils, set the plate on the rack and cover. Steam over medium heat with steady steam for about 8–10 minutes, timing from when the plate is in and the lid is closed over boiling water. The shrimp must be firm, pearly and opaque through the center, and the tofu hot through. Continue steaming if needed. Keep boiling water below the plate.

Carefully lift out the plate and scatter over all the spring onions. Keep the steaming juices and serve hot, spooning gently to keep the tofu intact.

Use 300 g drained firm tofu, cut into about 2 cm chunks. Arrange in Step 1 and steam until hot through in Step 4; the texture is firmer.
